Delicious Plantain – A Tasty Way to Good Health


Plantains are a rich source of iron and help curing several ailments including anemia, constipation and also acute bronchitis. In all forms, plantains restore their goodness and check several health problems. One can eat plenty of any plantain dishes shedding away the fear of gaining weight or growing fat.

Here is a delicious plantain recipe that provides you with 232 calories of energy instantly along with 1.6 gm of protein, 62 gm of carbohydrates and 4.7 gm of fibre but no fat at all.

Preparing time: 10 minutes

Cooking time: 20 minutes

Serves: Four

Ingredients:

4 plantains/ raw banana

1 tsp til/sesame seeds

1 tbsp oil

2 pinches of asafoetida

3-4 red chilies

A few peppercorns

1 teaspoon urad dal

1 tablespoon grated dry coconut

1 teaspoon mustard seeds

1 teaspoon chana dal

A few curry leaves

Juice of one lime

1 tablespoon finely chopped coriander leaves

Salt to taste

Method of preparation

Steam the raw bananas for 7-8 minutes. Peel and grate them.
Wash and drain the sesame seeds. Roast them in a pan till the splutter. Keep aside.

Roast the grated dry coconut till pink and keep aside.
Fry the asafoetida, red chillies, peppercorns and udar dal till the dal turns pink. Keep it aside.

Powder all the fried ingredients, adding the coconut at the end.

Fry the mustard seeds in the remaining oil till they splutter. Add the chana dal and curry leaves and fry till the dal turns pink.

Finally add the grated banana and cook. Add the powdered spices and salt. Stir gently taking care not to mash the banana.

Add the lime juice and garnish with coriander leaves.

This recipe makes an excellent side dish with chapattis or Jeera Rice. It is fat free and can be consumed by all. It is also an ideal food for diabetic patients.
