Beetroot is a vegetable of which both the roots and leaves are used for cooking. Most of the people will be familiar with the purple or red colored roots of beetroot. Beet root is rich in folic acid, potassium, manganese, fiber etc while the leaves are rich in iron, calcium, vitamin C and A. both the leaves and roots are good source of magnesium, phosphorus, vitamin B6, iron etc. Beetroot is also rich in zinc, iodine, chlorine, pantothenic acid, niacin, riboflavin, thiamine, beta-carotene, protein etc.
