Balsamic vinegar used in making salad dressings and marinades is made from the pure and unfermented juice of the grape. Several varieties of grapes are used for making balsamic vinegar.
However, the best quality balsamic vinegar is produced from the unfermented juice of the Trebbiano grape. The premium quality balsamic vinegar made from the Trebbiano grapes come from Modena in Italy. Popular grape varieties, such as Sauvignon, Ancellotta and Lumbrusco are also used for making balsamic vinegar.
Traditionally balsamic vinegar was produced by reduction of grape juice. However, nowadays production of balsamic vinegar often follows the production process of common vinegars, involving oxidation of fermented fruit juice.
The acetic acid bacteria are used for the oxidation of the grape juice. It might take few months up to several years to make balsamic vinegar. Aged balsamic vinegars are the most expensive.
