The Lure of the Carrot

Carrots are commonly used in all kinds of cooking. Vegetables, soups, salads and even desserts are made using carrots. Its popularity is not only because of its appealing taste, but also for it nutritive properties.

Carrots are of great use to the health but should not be taken in excess. The juice should be drunk slowly. It is sweet in action and a tonic, containing plentiful ingredients for the human body. It is pungent, hot and light, and is useful for patients suffering from piles, chronic sprue, and is sometimes also given to anemic people. It subsides the air and water elements. Due to the high content of vitamins A and D, it is used as a tonic for the eye. Due to its hot action, the seeds of the carrot are used for the purpose of abortions.

It finds good use in the making of pickles, jams and nutritious jelly. Carrots can be freely made and consumed in the wnter. However, due to its hot action one must be very careful in the quantity of intake during summer.

Carrots are high in potassium salts. It acts as a digestive when taken in moderate quantities, but could lead to gastric upsets if taken in excess. When eaten raw, carrots prevent the occurence of worms. It is useful in gastric acidity due to its sweet taste.

There are two varieties of carrot, cultivated and wild. The dose of cultivated carrot should be started with half to one cup and then gradually increased.

Carrots also find use in helping the skin. Due to its high carotine content, it helps protect the skin from sunburn and darkening. It can be consumed for effect, and also applied on the face using extract and also grated.

With restrained use of the carrot, many preparations can be made that are appealing to the taste and also the body. Proper use of the carrot can help bring the body in order easily.
