Valuing Our Vegetables


Who doesn’t know that vegetables are good for health. We all understand the need to include vegetables as a part of our daily diet. But we don’t always know that vegetables not only care for our health, but also help treat ailments well.

The cucumber is a great vegetable for the summer. It is cooling, quenches the thirst and is good for the warmer months. It can be had with red chillies, salt, or even with sugar.

Cucumber is a good diuretic which helps bring about clear urine. The seeds also find medicinal use. They are diuretics and good tonics. The narcotic or intoxicating effect of alcohol is also reduced with the use of cucumber. This is a good vegetable for those suffering from disorders of fire and air.

Celery juce is good for those with dyspepsia. Those suffering from colds, coughs, rheumatic pain and gastric trouble can have celery juice for relief.

Corn is a good food provided it is properly digested. It is sweet, unctuous and nutritive. Corn can be eaten plain after either boiling or roasting and tempering. It can be used in salads and soups, or even in vegetables and main courses. Corn also yields an oil which can be used for cooking.
