The dried and edible seeds of leguminous crops are called pulses. Pulses are considered as a useful element for a balanced diet. They are rich in fiber, protein, vitamins, and minerals but are low in glycemic index. Being a rich source of protein, pulses cause fewer allergies in human beings. The low fat pulses are a good ingredient in weight management diet.
Benefits of Pulses
1. The glycemic index of pulses is around GI 55 which is considered as a low value. Glycemic index indicates the level of carbohydrate present in the food. Lower the glycemic value greater will be the time required for digestion. Thus the food with lower glycemic value will break down slowly and release glucose slowly in to the blood. This will help the people having diabetics because the less amount of glucose in the blood can be broken down with less amount of insulin produced by their body. Hence they can manage their glucose count easily with a diet that contains more pulse. More than that pulse will keep the lipids in the blood at a low level and thus wards off the complication of diabetics.
2. Pulses are found to be ideal for people having cardiac problems. This is because pulses consist of good amount of fibers, resistant starch and the complex carbohydrates called oligosaccharides. All these elements are ideal for lowering the cholesterol level in the body which in turn will benefit the cardiac patients.
3. Pulses are good sources of proteins, vitamin A and vitamin B which help to keep the human being fit. Pulses also contain iron and little amount of saturated fat and sodium and are cholesterol free. Most of the pulses contain folic acid also.
4. Pulses will help you to prevent the fat deposition in the body. The low glycemic index of the pulses will bring down the triglycerides present in the body and there by reduces the deposition of fat on the body. Hence pulses are ideal for obese people and also for those who have cardiac problems. This is because pulses will reduce the deposition of fat in the arteries and blood vessels and there by reduces the risk of blocks.
5. Some people will have small intestine, which are sensitive to the protein gluten. This situation is called celiac disease and the presence of gluten in the food will leads to improper digestion in such people. Pulses are good for celiac patients as it does not contain gluten.
